I absolutely love Whoopie Pies... This past Christmas, Andrew's mom got me a Whoopie Pie pan. LOVE IT! highly recommend getting one. It is a Wilton and you can find them just about anywhere,

I recently took a trip to Walmart and was looking at all their fall decor. Then on a slim shelf, kind of hidden I found a Fall/ Harvest Whoopie Pie tray!
I can't find it online, but at Wilton.com I found this one. But on mine there is also acorns. But think how cute my Whoopie Pies are going to be! Since I am leaving for Tuscon, AZ this coming Monday I will be using this pan to make some more.

Okay so are ready for how I made them?
Cake:
{this recipe is also Libby's Pumpkin Roll, I use it for my Pumpkin Rolls...
I just added the pumpkin pie spice for taste}
1/4 cup powdered sugar
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup 100% Pure Pumpkin
::extra powder sugar::
Preheat oven to 375°F.
Grease whoopie pie pan, and sprinkle with powder sugar
Combine flour, baking powder, baking soda, cinnamon, cloves, pumpkin pie spice and salt in small bowl.
Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin.
Stir in flour mixture.
I used my ice cream scoop, and spooned an ice cream scoop into each circle.
Bake for 10 to 15 minutes or until top of cake springs back when touched. Or I watch for the edges to be a little a brown. Pop them out of the pan and let them cool.
Continue till you have all your batter cooked.
Let's Make the filling:
1 pkg. (8 oz.) cream cheese, at room temperature
1 cup powdered sugar, sifted
6 tablespoons butter, softened
1 teaspoon vanilla extract
Extra Powdered sugar (optional for decoration)
Beat the cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth.
Take one of the Whoopie Pie ends and spread some of the spread onto the end.
Now take another Whoopie Pie end and make a sandwich.
I always like to wrap ours individually in saran wrap or foil and freeze them. They are so good out of the freezer, also yummy when you heat them up in the microwave.
If you don't want to freeze them, make sure you at least let them set in the fridge for about an hour.
